How to choose real extra virgin olive oil

A good bottle should make sense before you open it, then still prove itself when you taste it. Start with the label, but let aroma, bitterness and that clean peppery finish have the final word.

Look for this: freshness, clear origin, clean aroma, balanced bitterness and a peppery throat catch. Color is not the only indicator.

Read the back of the bottle before the front

A beautiful label can get your attention, but it cannot prove much by itself. The useful details are usually quieter: harvest date, producer, region, olive variety, extraction method and packaging. If you are buying Albanian extra virgin olive oil as a gift from Tirana, those details also give the person a real story to take home.

Harvest dateBest-by dates help, but harvest information tells you when the olives were picked. Fresher oil usually tastes brighter.
OriginLook for a named producer, region or estate. It is better than a vague blend with no place named.
PackagingOil hates light and heat. Dark glass, tins or opaque packaging protect it better than clear decorative bottles.
ExtractionCold extraction is useful, but still check freshness, smell, taste and origin.

The throat catch is not a flaw

Professional olive oil tasting looks for positive attributes like fruitiness, bitterness and pungency, and also checks that the oil has no obvious defects such as rancid or musty notes.

Olive oil is closer to fresh juice than to something that lives forever in the pantry. Once opened, it meets air every time you use it. Keep it closed, cool and away from the window. Do not store it next to the stove just because it is convenient.

  • Do not leave it beside the stove.
  • Close the cap after every use.
